This salad was made out of the ingredients that I had in the fridge. I didn’t go to the supermarket specifically to buy them. I also love cooked apples! I think they make a great addition to crunchy red cabbage and creamy turmeric yogurt dressing!
The recipe is also packed with vitamins and you can consider it healthy(ish) 🙂

Pro tip: to make chia seeds a little softer soak them in dressing prior to serving.
- 4 cups of red cabbage
- 3 medium gala apples
- 120 grams of cucumbers
- 2 tablespoons of chia seeds
- 8 tablespoons of pecorino romano (grated)
- 80 grams of red onion (chopped and soaked in vinegar)
- 120 grams of 0% yogurt
- 4 tbsp of olive oil
- 4 tbsp of lemon juice
- 2 tbsp or turmeric (ground)
- 355 Calories
- 20g Fat
- 40g Carbs
- 10g Fiber
- 10g Protein
Marinate red onion in vinegar for 15-20 minutes until bright pink.
Fry apples on medium heat for 30-40 seconds on each side.
Cut cucumber and red cabbage. Add red onion, fried apples and chia seeds.
Make a dressing. Mix yogurt, olive oil, turmeric, salt, pepper, and lemon juice. Add to the salad.
Shave pecorino Romano over the top and serve!
