Many of us learned in childhood that fresh foods and vegetables must be stored in the refrigerator, but, as it turned out this is not entirely true.
After working as a chef in the kitchen, you come across many things that you have done all wrong. Many respectful restaurant store tomatoes at a room temperature and not in the refrigerator.
Scientists from the University of Florida found that refrigerated tomatoes and tomatoes at room temperature are actually two different products. They conducted a study and put the tomatoes in the fridge for a week. Then the vegetables were brought to room temperature and examined by the researchers. They found that the cold actually changes the genetic structure of the fruit and kills its taste. The study was conducted on two types of tomatoes, and both lost their natural and rich flavor during the cooling process.
According to the New York Times, a professor of horticultural sciences who conducted the study described this as follows:
“Remove the violins and the woodwinds,.” “You still have noise, but it’s not the same. Add back just the violins, and it still isn’t right. You need that orchestra of 30 or more chemicals in the right balance to give you a good tomato.”Scientists who conducted the same study advise buyers to postpone the use of tomatoes immediately after purchase and allow them to ripen for a couple of days and also stay away from buying them in the winter.
I want to add from myself that tomatoes can be stored at room temperature for about 1.5 – 2 weeks, as they usually are not yet fully ripened.
