I always have leftover dough from pies that I bake for dinner, and I feel bad about throwing it away.
A few days ago we had a pot pie, and I saved some dough. This morning I noticed that it’s been sitting for three days and I must use it. So I made these tiny pies with pear and Gorgonzola. Note, this recipe yields about 12 small ramekins. If you don’t want this much dough, make a half batch.
- 6 tbsp Butter
- 3 pinches Salt
- 1 1/4 cups All Purpose Flour
- 2 tbsp Oregano
- 1 Egg
- 1/4 cup Sour Cream
- 1 tsp Citron
- 1 Pear
- 50 grams Gorgonzola
Combine 6 tbsp of butter, three pinches of salt, 1 1/4 cups of flour and 2 tbsp of oregano in a food processor into the crumbs.
Add one egg and 1/4 cup of sour cream and knead until the dough is formed.
Put into a fridge for 1 hour.
Heat oven to 400 F.
Cut pears into small squares. Mix with salt, pepper, and 1tsp of finely chopped citron and set aside.
Roll dough into a 0.5cm thick round.
Place it into ramekins and fill them out with pears.
Bake for 7 min. Take it out, put some Gorgonzola on top and bake for another 3 min.
Let it cool for 3 min and serve!
